Easy Healthy Weeknight dinner.
Avocado is my favorite snack. I usually just slice it open and dig in. However, a quick way to make a healthy guacamole is to mix the avocado with fresh salsa, add some chopped cilantro and lime juice. If you want to make it creamier, add Greek yogurt to the mix. I will eat an entire bowl!
This is a recipe that I have on hand for most of the summer. It is super easy and light.
